Ingredients
  

  • 4 cups watermelon cut into 1-inch cubes
  • 1 cup feta cheese crumbled
  • 1/2 cup fresh mint leaves chopped
  • 1/4 cup red onion thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • Salt and pepper to taste

1 cup cucumber, diced

1 avocado, peeled and diced

1/4 cup Kalamata olives, pitted

Arugula leaves

Basil leaves instead of mint

Instructions
 

  • Cut the ends of the watermelon and remove the rind. Slice it into manageable sections and then into 1-inch cubes.
  • Thinly slice the red onion and chop the mint leaves. If using cucumber or avocado, dice them accordingly.
  • In a small bowl, whisk together the olive oil, lime juice, salt, and pepper until well combined.
  • In a large bowl, combine the watermelon, feta, mint, and red onion. Pour the dressing over the salad and gently toss to coat all ingredients evenly.
  • Transfer the salad to a serving platter, garnish with extra mint leaves, and serve immediately. Optionally, chill for 15 minutes before serving for an extra refreshing taste.
