Ingredients
  

  • 6 large jalapeno peppers
  • 4 oz cream cheese softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • Cooking spray or oil for baking or frying

Instructions
 

  • Preheat your oven to 375°F (190°C) or heat oil in a fryer to 350°F (175°C).
  • Slice the jalapenos in half lengthwise and remove the seeds and membranes.
  • In a bowl, mix together the cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese, garlic powder, onion powder, paprika, salt, and black pepper.
  • Fill each jalapeno half with the cheese mixture.
  • Place the flour, beaten eggs, and panko breadcrumbs in three separate bowls.
  • Dredge each stuffed jalapeno in flour, then dip in the beaten eggs, and coat with panko breadcrumbs.
  • For baking: Place the poppers on a baking sheet lined with parchment paper and lightly spray with cooking spray. Bake for 20 minutes or until golden brown and crispy.
  • For frying: Fry the poppers in hot oil until golden brown, about 2-3 minutes. Drain on paper towels.
  • Serve warm with your favorite dipping sauce.
