Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 jalapeno seeded and diced (optional, for heat)
  • 1 tbsp taco seasoning
  • 1 can 10 oz diced tomatoes with green chilies
  • 4 cups beef broth
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Optional toppings: sour cream, avocado, cilantro, lime wedges

Instructions
 

  • In a large pot or Dutch oven, brown the ground beef over medium-high heat until no longer pink. Drain excess fat if needed.
  • Add diced onions, garlic, bell pepper, and jalapeno to the pot. Cook until vegetables are tender, about 5 minutes.
  • Stir in taco seasoning, diced tomatoes with green chilies, and beef broth. Bring to a boil.
  • Reduce heat and simmer for 15-20 minutes to allow flavors to meld.
  • Stir in shredded cheddar cheese until melted and well combined. Season with salt and pepper to taste.
  • Serve hot, garnished with optional toppings if desired.
