Ingredients
  

  • 1 lb fresh mushrooms sliced
  • 2 tbsp butter
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 tsp thyme dried or fresh
  • Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

  • In a large pot, melt butter over medium heat.
  • Add the chopped onion and sauté until translucent.
  • Add minced garlic and sauté for another minute.
  • Add the sliced mushrooms and cook until they release their moisture and become tender.
  • Pour in the chicken or vegetable broth and bring to a boil.
  • Reduce the heat and let it simmer for 10 minutes.
  • Stir in the heavy cream and thyme.
  • Use an immersion blender to blend the soup to desired consistency (smooth or slightly chunky).
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley if desired.
