Ingredients
  

  • 1 medium head of cauliflower or 1 package of pre-riced cauliflower
  • 1 cup mixed vegetables e.g., carrots, peas, bell peppers, either fresh or frozen
  • 1 lb protein choose from chicken breast, shrimp, or tofu, cubed or sliced
  • 2 tablespoons soy sauce or coconut aminos for a gluten-free option
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated, or 1/2 teaspoon ground ginger
  • 2 tablespoons oil vegetable, sesame, or olive oil

2 eggs , for added protein

  • Salt and pepper to taste

Green onions or cilantro (for garnish)

Lime wedges (for serving, optional)

Instructions
 

  • Prepare the Cauliflower:
  • Wash the cauliflower and remove the leaves and stem. Cut it into florets.
  • Use a food processor to pulse the cauliflower florets until they resemble rice grains. If you don’t have a food processor, you can grate the cauliflower with a box grater.
  • Cook the Protein:
  • Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat.
  • Add the protein of your choice (chicken, shrimp, or tofu) and stir-fry until fully cooked. Remove from the pan and set aside.
  • Sauté the Vegetables:
  • In the same wok, add another tablespoon of oil.
  • Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  • Add the mixed vegetables and stir-fry for 3-5 minutes, or until they are tender.
  • Cook the Cauliflower:
  • Add the cauliflower rice to the wok with the vegetables. Stir well to combine.
  • Cook for about 5-7 minutes, stirring frequently, until the cauliflower is tender but not mushy.
  • Season the Dish:
  • Return the cooked protein to the wok. Pour in the soy sauce and stir well to coat everything evenly.
  • If using, push the ingredients to one side of the wok and scramble the eggs in the empty space. Once cooked, mix them into the cauliflower rice.
  • Final Touches:
  • Season with salt and pepper to taste. Adjust the seasoning as needed.
  • Stir everything together and cook for another 1-2 minutes to ensure everything is heated through.
  • Serve:
  • Garnish with chopped green onions or cilantro if desired. Serve with lime wedges on the side for an extra burst of flavor.
