- 1 pound Brussels sprouts: Fresh firm, and green.
- 1/4 cup olive oil: Extra virgin for a rich flavor.
- 2 tablespoons lemon juice: Freshly squeezed for brightness.
- Salt: To taste.
- Black pepper: To taste.
- 1/4 cup almonds or walnuts: Toasted for crunch.
- 1/4 cup Parmesan or feta cheese: Crumbled for added flavor.
Prepare the Brussels Sprouts:
Rinse the Brussels sprouts under cold water.
Trim the ends and remove any discolored outer leaves.
Slice the Brussels sprouts thinly using a sharp knife or a food processor for a finer shred.
Make the Dressing:
In a small bowl, combine the olive oil and lemon juice.
Add salt and black pepper to taste. Mix well until the dressing is emulsified.
Assemble the Salad:
In a large salad bowl, place the shredded Brussels sprouts.
Drizzle the dressing over the Brussels sprouts and toss well to coat all the pieces evenly.
Add Optional Ingredients:
If using, sprinkle the toasted almonds or walnuts and crumbled Parmesan or feta cheese over the salad.
Toss gently to mix the optional ingredients with the Brussels sprouts.
Serve:
Serve the salad immediately, or refrigerate for 10-15 minutes to allow the flavors to meld. Enjoy chilled or at room temperature.
