Ingredients
  

  • 1 cup heavy cream
  • 1/4 cup powdered erythritol adjust based on sweetness preference
  • 1 teaspoon vanilla extract
  • 3 tablespoons unsweetened cocoa powder
  • 2 ounces dark chocolate at least 85% cocoa, chopped
  • Pinch of salt

Instructions
 

  • Melt the chopped dark chocolate in a heatproof bowl over simmering water or in the microwave until smooth. Set aside to cool slightly.
  • In a separate bowl, whip the heavy cream until it forms soft peaks.
  • Fold in the powdered erythritol, vanilla extract, cocoa powder, and salt into the whipped cream, mixing gently until well combined.
  • Gradually pour the cooled melted chocolate into the whipped cream mixture, folding gently until fully incorporated and smooth.
  • Spoon the chocolate mousse into individual serving dishes or glasses.
  • Cover and refrigerate for at least 1-2 hours, or until the mousse is chilled and set.
  • Before serving, garnish with whipped cream, cocoa powder, or grated dark chocolate if desired.
