Ingredients
  

  • 2 medium zucchinis
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • Cooking spray

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Line a baking sheet with parchment paper and lightly coat with cooking spray.
  • Cut the zucchinis into sticks, about 3 inches long and 1/2 inch thick.
  • In a shallow dish, combine the panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  • In another shallow dish, beat the eggs.
  • Dip each zucchini stick into the beaten eggs, then coat with the breadcrumb mixture, pressing lightly to adhere.
  • Place the coated zucchini sticks on the prepared baking sheet in a single layer.
  • Lightly spray the zucchini sticks with cooking spray.
  • Bake for 20-25 minutes, or until golden brown and crispy, turning halfway through.
  • Serve immediately with your favorite dipping sauce.
