ingredients
A match. You can choose ceremonial grade matcha or culinary matcha for this recipe. I’ve used both and felt little to no difference if you don’t eat it “neat”, especially if it’s mixed with milk. Make sure you use 100% matcha powder to get the full matcha flavor.
Some powders have milk added to them (not 100% matcha). If this is what you have, you can still make these ice cubes to be used with beverages containing milk.
water. Use water when making these ice cubes, if you’re using them for drinks like matcha lemonade, or if you’re making cold matcha.
milk. Use milk when making ice cubes if you are using them for drinks with milk, such as an iced matcha latte or even a dirty matcha.
sugar. Sugar is optional. You can omit this ingredient if you prefer sugar-free matcha ice cubes, or replace it with your favorite sweetener if you want sweet matcha ice cubes but want to reduce the sugar.
How to do it
We won’t be using a bamboo stirrer when making these ice cubes: mix everything in a blender, mason jar, or cocktail shaker. It’s easy, simple and takes less than 5 minutes.
Step 01. In a jar with a lid, cocktail shaker, or blender, add matcha powder, water or milk, and sugar or sweetener, if using.
Step 02. Mix or shake until the ingredients are well mixed and the matcha is fully incorporated into the liquid.
Step 03. Pour the matcha into the ice cube tray and freeze until firm. It usually takes 5 to 6 hours to harden the matcha ice.
Step 04. Once set, if your ice cube tray is uncovered or you won’t be using the ice cubes for the next 24 hours, place them in an airtight container or bag to avoid any unpleasant flavors they may acquire from the refrigerator.
Expert advice
- It takes a little longer to freeze the ice cubes if you use sugar. Do not use more than 5 tablespoons or the ice will not set properly. Also, the smaller the size, the faster the ice cubes will freeze.
- If you use a sweetener, be sure to check the amount you should use equivalent to the amount of sugar this recipe calls for. Different sweeteners have different levels of sweetness.
- If using honey instead of sugar, shake well or dissolve the honey in 3 tablespoons of hot water before adding to the recipe, as it may be more difficult to dilute this ingredient with cold/room temperature water.
- As for the color, the intensity of the green depends on the quality of the matcha. Better matcha makes the ice cubes greener, while ice cubes made with low-quality matcha have a darker green color.
